《柳丁炸醬虎咬豬》

刈包是很受歡迎的台灣美食,傳統做法是將蒸好的荷葉形白饅頭包裹著一件五花肉,因狀似一個虎嘴,所以亦有人稱這小吃做「虎咬豬」。
因為健康理由不敢吃五花肉,我會以半肥瘦豬肉或植物豬肉替代。
用「蘇太柳丁炸醬」* 炒出來的豬肉帶著淡淡橙香,能中和豬肉的肥膩感。

材料:
急涷荷葉包 (在不少素食材店或雜貨店有售)
免治豬肉 / 植物豬肉 (用生抽、糖、生粉醃好)
蒜蓉(少許)
即食榨菜(切粒)
「蘇太柳丁炸醬」

做法:
1)用蒜蓉將免冶豬肉炒熟,拌入「蘇太柳丁炸醬」及即食榨菜,再埋一個薄薄生粉獻汁增加其粘性,熄火備用。
2)急涷荷葉包放入蒸籠蒸五分鐘。
3)將豬肉饀釀入蒸熱了的荷葉包內,可隨意拌入一些青瓜絲,趁熱吃啊。

柳丁炸醬之主要成份:菜籽油、橙、冬菇、金華火腿、乾蔥、蒜頭、茄汁、糖、調味醬、辣椒醬、子薑、麵豉醬 和醬油
