Snow cabbage is a preserved pickle used normally for frying or as an accompaniment to noodles. It is very rarely used as an ingredient in sauces. Together with other fungus and dried ingredients, we have successfully turned snow cabbage into a very tasty sauce readily available at all time for noodles, frying or just with a bowl of congee.
